Fermented Christmas Pie Fruit Mince

Ingredients:

  • 200g chopped dates
  • 140g Cranberries
  • 300g raisins 
  • 1 orange, zested and juiced
  • 50g walnuts
  • 1 Apple grated with peel on
  • 1 teaspoon cinnamon
  • 1 teaspoon ground ginger. 
  • ¼ teaspoon nutmeg
  • ¼ teaspoon ground cloves
  • 4 tablespoons of cultured liquid ( this could be whey from milk kefir, sauerkraut juice or kombucha with your )

Method:

  1. Mix all ingredients together
  2. Mix in 4 Tbsp of a cultured liquid through your ingredients
  3. Pack the mincemeat into your Symbiota jar for fermenting. Be sure to press the fruit down so no air is trapped and all the air is squeezed out.
  4. Press until the liquid flows over the top, then place your glass fermentation weight on top and give a little press down.
  5. If you reduire more liquid, add a tablespoon at a time of your culture liquid
  6. Screw your airlock lid on and place somewhere out of the sun, where it is not too hot and temperatures are stable
  7. Ferment 48 hours. 
  8. Move to the fridge and cool ferment for another 2-3 weeks before using. 
  9. If you would like to add a bit of alcohol, stir in the brandy right before serving.
