What are Water Kefir Culture/grains?
Water kefir grains are a symbiotic culture of bacteria and yeast that form together to look like grain-like crystals which people either refer to as grains or culture.
Water kefir culture is used to ferment sugar water into probiotic-rich fermented drinks. It is light, refreshing, and effervescent. Water kefir is generally milder than kombucha and does not have that sharp taste.
You can flavor your kefir with fruits, herbs, and spices to your desired taste.
Although water kefir grains all have similar bacteria, they do vary slightly from one to the next. Symbiota water kefir grains originate from multiple sources to maximize the diversity of bacteria; ultimately producing strong, active, and healthy grains.
How do I make water kefir?
If you have not made water kefir before, you might consider purchasing our water kefir kit to make the process even easier.
Water kefir is very easy to make and incorporate into your weekly routine.
You simply add your kefir culture to sugar water and leave it to ferment for 24-72 hours at room temperature (20-24 degrees Celcius). Once fermented, drain your water kefir off, reserving your culture for your next ferment. Once you have bottled your fermented kefir you can flavor it with any fruits, herbs or spices.
Your culture will last a lifetime if correctly cared for.

Why is Symbiota's Kefir Culture Superior?

You are supplied a portion of active water kefir grains (3TBS or +-150 grams including starter liquid) which is enough to culture 3-4 cups of water within 24h-72hrs depending on the temperature it is fermented at. The warmer the temperature (but not exceeding 26 degrees Celcius) the faster your water kefir will ferment.

Organic Water Kefir Grains
The grains were not healthy, seemed to be contaminated with kombucha. Grew a snobby at surface and brew was very acetic.

I don’t know the orange colour of something with grains are needed to be washed out?
Activating is a bit slow so just wait and see…
Hi Mizuho. Sorry to hear you feel there was not much in there. Every portion is 3 tablespoons (as per listing) to start fermenting 1L of water kefir. If this was not the case, please email us on info@symbiota.co.nz Please note grains change size due to various variables, including seasonal changes.
The orange colour is from feeding our cultures organic sugars (not white refined sugars). If you have concerns please contact us.

Wasn’t too happy with the brewing. Grains were not plump and didn’t do that well. This is my second purchase with similar results both times. I brewed successfully when a friend gave me her grains.
Hi Sumi. Sorry to har you have not been satisfied with your water kefir grains. We always recommened contacting us if you are having problems. I have noted both purchases were in winter. The main problem for grains not being as active as they can be is due to seasonal changes and not enough warmth. I recommend you try to keep them as close to 24 degrees for them to be fully active. Alternatively, contact us and we will offer 1:1 troubleshooting.
