Getting Started

What is water kefir?
Water kefir is a naturally fermented, probiotic-rich drink made by culturing sugar water with water kefir grains — live colonies of beneficial bacteria and yeasts.

How is it different from kombucha?
Water kefir is lighter, less acidic, and typically has a shorter ferment time. It’s caffeine-free and a great option for kids or those avoiding kombucha’s tang.

What does it taste like?
Mildly sweet, slightly tangy, and gently effervescent. You can flavour it with fruit, herbs, or spices after the first fermentation.


Caring for Water Kefir Grains

What are water kefir grains made of?
They’re gelatinous clusters of bacteria and yeast held together by polysaccharides. They look like crystals and are completely natural.

Do I need to rinse them?
Not usually. Rinsing can disrupt the microbial balance. Just strain and re-culture in fresh sugar water.

What kind of sugar should I use?
Organic raw sugar is best. You can also use coconut sugar or a blend, but avoid artificial sweeteners and honey (which is antimicrobial).

How often do I feed them?
Every 24–48 hours when kept at room temperature. You’ll know they’re hungry if the kefir tastes very sour or flat.


Fermentation Basics

How long does water kefir take to ferment?
Usually 24–48 hours for the first fermentation. The second ferment (with added fruit/flavour) takes another 12–24 hours.

Can I make it fizzy?
Yes! Bottle your kefir with a little fruit or juice and seal tightly for 1–2 days. Chill before opening.

Why isn’t it fizzy yet?
It may need more sugar, a tighter lid during the second ferment, or warmer ambient temperatures.

Do I need to sterilise my jars?
No need for harsh sterilisation — just make sure everything is clean and rinsed well. Avoid soap residue.


Troubleshooting

Why does my kefir taste off?
It could be over-fermented, underfed, or exposed to contamination. Trust your nose — it should smell yeasty and slightly sweet, never rotten or mouldy.

My grains aren’t growing — what should I do?
Make sure they’re getting enough minerals (a pinch of molasses can help), fresh water, and aren’t kept too cold.

Can I pause fermentation?
Yes — pop your grains in sugar water in the fridge. Feed them every 1–2 weeks to keep them healthy.

Is water kefir good for gut health?
Yes! It’s rich in natural probiotics and beneficial metabolites that support digestion and immunity.

Can I drink it every day?
Many people do, but start slowly — especially if you’re new to fermented foods. A small glass a day is a good starting point.

Is it safe for kids or pregnant women?
Generally yes, but always consult a healthcare provider. It contains a trace amount of natural alcohol from fermentation.
