Fermenting Crock 4.5L

Why use fermenting crocks to ferment you own produce?

Fermentation pots provide the perfect anaerobic environment. Symbiota's ceramic fermentation pots keep the internal temperature stable for the probiotic bacteria to thrive, unlike glass which is exposed to light and experiences temperature swings.

Symbiota's fermenting crocks have been specifically designed to not only be the most beautiful pots on the market but also functional and easy to clean.

Our fermentation crocks are ideal for fermenting kimchi, sauerkraut, fermented vegetables or preserving food.

Fermented foods are an important part of supporting gut health, and immune systems, and mental health. More than 70% of our immune system resides in our gut, while more than 90% of serotonin and 50% of dopamine are produced in our guts.

Many autoimmune diseases are also a result of poor gut health, thus consuming fermented foods is a piece of the puzzle to support good health.

Which size pot best fits my needs?

The 4.5L Fermentation pot makes approximately 4kgs of fermented produce and is best suited to a family of 3-4 eaters or 2 adults that do not want to be fermenting too regularly. Bare in mind that each cycle of sauerkraut ferment should be fermented for at least 3 weeks for the best diversity and concentration of probiotic bacteria.

Below is a conversion of approximately how much our pots ferment

2L ferments 1.8-2kgs of produce

4.5L ferments 4-4.5kgs of produce

7L ferments 6-7kgs of produce

Ideally, most sauerkrauts should be fermented at a lower temperature (18-20 degrees celsius) for at least 3 weeks for the best probiotic diversity and content. If you are going to be eating 1.5kg+ of sauerkraut per month or you do not want to be fermenting too frequently it would be better to get the 4.5L pot. If you are a gardener or a large family and looking to preserve produce, you would likely consider the 7L fermentation crock. If you would like to discuss this, feel free to give us a call and we can support you in finding which crock is best for your needs.

I'm at day 14 with my Basic Sauerkraut

Can't give a proper review yet as I'm unwell, lousy taste buds today. I think it isn't ready yet. Opened the crock today, after 14 days at 20-22 degrees. Just seems salty, not developing flavour yet. Will open again in a few days.

    Let the fermenting begin!

Looking forward to eating our first batch of sauerkraut
