What is a gluten-free sourdough starter?
Gluten-free sourdough starter is a combination of gluten-free flour, water, and a friendly bacteria known as a “starter culture” that helps to create a leavening agent. It is used to make gluten-free sourdough bread and other baked goods. The starter culture helps to break down the starches in the flour, creating a dough that is easier to digest and more flavorful than just using gluten-free flour alone. It also provides a unique flavor and texture to the finished product.
How do I make GF sourdough bread?
Gluten-free sourdough bread is made with a combination of gluten-free flours, such as brown rice, sorghum, millet, buckwheat, potato starch etc, and a sourdough starter. The starter is a combination of activated yeast and bacteria that help to leaven the bread and give it that signature sour flavor.
Symbiota's gluten-free starter is several years old and continuously nurtured for the best GF sourdough bread outcome. This means it is diverse in probiotic bacteria and resilient. When receiving your live sourdough starter, you will need to feed it and it will be ready to bake with within 1-3 days. We also offer a dried starter for those who would like to purchase this starter but not bake with it soon after receiving it.
We feed our GF sourdough starter a combination of brown rice flour, buckwheat, and potato starch so it is already used to a variety of GF flours; making it quick to adapt to its new environment in your house. Gluten-free starters do best when primarily fed organic brown rice flour.

The gf started arrived safe and sound and was easily built up to make a couple of loafs in two days time. I knew in advance what to feed it thanks to your website tho’ and used the instructions for feeding. I’ve followed my own much simpler recipe for bread making, however. I have been making conventional sourdough for my family for over a decade and now I can finally make Sourdough that suits my needs too!! The gf starter is easy to look after and have made couple batches of the gf sourdough bread just using similar ratios and times (not flours tho’ ) to original conventional recipe … there is now a whole lot of bread making going on in our house.
It died so not happy with the purchase

Just baked my forst loaf from the dried starter and it was great.
I've made 5 loaves with this starter and they keep getting progressively better. I love this starter.
Make sure you get a dutch/french oven, it really does make a superior loaf which is soft and bubbly.
I get my specialty flours from the local Indian supermarket for a fraction of the cost of other stores.
