What is sourdough bread?
Sourdough bread is well known for its tangy flavor, crusty crusts, and chewy texture. It is far healthier than store-bought bread as the process of fermentation breaks down the gluten, making it far easier for our bodies to digest.
What is a sourdough starter?
Sourdough is a naturally leavened or fermented bread that does not contain any additives or use any yeast to rise. Instead sourdough uses a starter culture which makes it rise and gives it a sour taste.
A sourdough starter is a wild ferment of water and flour which contains yeast and good bacteria.
Sourdough starters can be used for much more than just bread. Some of our favorites are scones, waffles, crumpets and crackers! Check out our blog for sourdough uses and recipes!
Our sourdough starters take well to lots of different flours. In house they are fed mostly organic stone ground flour and organic spelt flour but you can titrate this starter onto a flour of your choice.
How to make sourdough bread using a starter
Basic sourdough bread is made with sourdough starter, water, flour and salt.
We also offer a gluten-free sourdough option

I’ve struggled with making my own sourdough starter so I looked into this product and I am very impressed with the quality of the sourdough starter. The instructions are clear and straightforward and my starter is already bubbly after 2 days. Thank you 🙏
I am a complete newbie to sour dough , although I appreciate the go too YouTube notes , I feel there could be perhaps clear instructions or video tutorials,
The starter arrive a few days later, it’s working well, family are loving the bread
Happy with the starter and jar etc; disappointed with the instructions. I did go to You Tube, and watched a number of videos; all informative, however all a little different, and not a great start for a complete novice. No mention of the proofing basket in your recipe.
I ended up ordering the Baking Sourdough Bread Guide from KoruKai; for me it was really helpful. Step by step instructions as well as hyperlinks for great videos on particular stages.
Hi Andrew. Thank you for your feedback. There a many many many different ways to feed sourdough, work with sourdough and bake sourdough. We try to provide a basic starting point for everyone without any fancy equipment. We do not expect customers to have the baskets and lames and therefore provide instructions whereby people can use their household equipment that they likely would already have, so to be as inclusive as possible. The Sourdough starter was alive and well when I received it and it has performed well. However, I would NOT recommend this kit to someone who is new to Sourdough bread making as I am. As a newbie I expected more written information on how to care for starter, what to expect/ what not to do, making successful bread etc. Instead I got an A4 piece of paper that told me to watch YouTube videos and referred me back to the Symbiota website...EXACTLY what i wanted to avoid by buying the kit in the first place! What did I pay all that extra money for? If you are a newbie, just buy the starter by itself and do your own research. The flour at Symbiota is reasonably priced which is a plus. Maybe Symbiota need to be precise about what customers are receiving in their "instructions" on Sourdough. Feeling a wee bit ripped off....
Hi Anna. We are sorry to hear you feel ripped off. We provide all basic information necessary to get going making sourdough bread and feeding your sourdough starter. As there are a million different ways to feed sourdough and bake sourdough bread we do suggest looking at different options to suit your lifestyle hence the reference to our blog and youtube for styles. If we included all this in the it, it would result in pages of information and a lot of confusion for people starting out. We do, however, offer a beginers guide to sourdough which you can download. Our instructions included in the kit include what flour to use, the feeding ratios and how to bake your first loaf. We do expand on this on our webisteas well once people are ready to explore more information. We will revise our instructions and take your feedback onborad to see how we can improve these with necessary information . Thank you
