Kefir Cheesecake

Milk kefir can have up to 60 different strains of probiotics. It is super versatile and can be included almost anywhere. 

Here is our irresistible Kefir Cheesecake recipe.

Note you could substitute you kefir with viili yogurt

Ingredients:

For your Kefir Cheesecake base:

  • 1 packet Vanilla Wine Biscuits
  • 6 Tablespoons melted butter (Optional)

For you Kefir Cheesecake Filling

  • 500g Cream Cheese 
  • ½ cup fermented kefir milk
  • 395 ml condensed milk 
  • 2 teaspoon lemon juice or a little lemon zest ( optional)
  • Fresh fruit for topping.

Instructions: 

For your Crust:

  • Crumble your vanilla wine biscuits and mix with melted butter if using. Press into a 20cm pan/dish

For your cheesecake filling:

  1. Mix/beat cream cheese on low speed so it is smooth. 
  2. Slowly add condensed milk while beating until it is fully incorporated
  3. Mix in milk kefir
  4. Mix in lemon
  5. Spoon onto your cracker base
  6. Layer fruit on top
  7. Chill for 4 hours before serving up.
