Fermenting Yogurt Using an Easiyo Yogurt Maker

Symbiota offers both mesophilic and thermophilic yogurt cultures.

The difference between thermophilic and mesophilic yogurt comes down to the temperature required for fermentation. Thermophilic yogurt cultures need higher temperatures, typically around 38–45°C, to grow and ferment properly. This includes yogurts like Greek yogurt, Symbiota Vegan Yogurt or Coconut yogurt and skyr, which are usually incubated using a yogurt maker or warm environment. In contrast, mesophilic yogurt cultures ferment at room temperature (20–25°C) and do not require heating, making them easier for beginners. These produce milder, often creamier yogurts like viili. Understanding this difference helps you choose the right method when making homemade yogurt.

 

Can I use my Easiyo Yogurt Maker to ferment thermophilic yogurt?

 

Yes, you can! While environmental temperatures may result in differing results the basics are still the same. 

  1. Heat your yogurt to 43°C
  2. Boil your Easiyo water. Let it cool for 5-10 mins (to approx to 85°C degrees), then add into the Easiyo maker.
  3. Add your jar of yogurt. If you are using glass jars- careful with any sudden heat changes. 
You will need to monitor the internal temp of your yogurt, not the water surrounding it to make sure the yogurt is at the correct temp.  You may also need to replenish the hot water depending on environmental temperatures. 

 

Alternatively, Symbiota also offers a heat mat which can achieve temperatures of 50°C. If the environment is very cold, simply wrap the mat around your jar instead of sitting the jar on top of the mat. For temperature guideline with using your heat mat, you can achieve the heat you need.
